Abstract
En este estudio se planteó la posibilidad de la empresa Girona S.A. dedicada por más de 10 años a buscar soluciones enzimáticas para productos horneados, de ampliar su gama de productos importando carrageninas para satisfacer el mercado alimenticio nacional.
Se investigaron los principales usos en alimentos, proporcionando textura y elasticidad en geles para productos como flanes, jaleas, cremas, embutidos, entre otros y su comportamiento frente a sales y temperaturas, logrando identificar el mejor tipo de carragenina para cada producto.
En el estudio de mercado se conocieron que los principales actores de carrageninas en el mercado chileno: Gelymar y Danisco, el año 2011 tuvieron una participación de mercado del 60% 16, siendo además de importadores productores de carrageninas. De acuerdo a las importaciones realizadas en Chile de carrageninas del 2004 al 2011, se proyectó para los siguientes años un consumo de 332 toneladas anuales.
Se seleccionó a la empresa Marcel Carrageenan de Filipinas como el proveedor de carrageninas que cumple con los aspectos técnicos en cuanto a funcionalidad que tengan en el mercado nacional y de calidad donde cumplan con toda la documentación requerida en Chile para su utilización en alimentos.
Se dimensionó una importación del 1% 16 de carrageninas de lo proyectado para el primer año, equivalente a 3.320 kilógramos para el 2012 y un crecimiento anual del 30% llegando al final del estudio el año 2018 con una importación de aproximadamente 16.000 kilógramos.
La inversión para iniciar este negocio es de US$11.300, se consideró una tasa de descuento del 12% y se obtuvo un Valor Actual Neto (VAN) de US$103.820 y una Tasa Interna de Retorno (TIR) de un 139% y el payback es al 1er año.46 Una de las variables importantes a considerar en el estudio de sensibilidad es el precio de compra de la carragenina donde el punto de quiebre para el VAN y el TIR es aproximadamente en los US$15,8/kg. La cantidad a importar no debe ser menor de los 170 kilógramos al año para que el negocio sea rentable.
This study raised the possibility of the company Girona SA dedicated over 10 years to search for baked goods enzyme solutions, expanding its product range to meet the importing carrageenans national food market. We investigated the main uses in food, providing texture and elasticity in gels for products like custards, jellies, creams, sausages, etc. and their response to salt and temperature, and succeeded in identifying the best type of carrageenan for each product. In the market study met the main actors in the Chilean market carrageenans, Gelymar and Danisco, the year 2011 had a market share of 60%, in addition to producing carrageenan importers. Import was sized 1% carrageenan than projected for the first year, equivalent to 3.320 kilograms in 2012 and an annual growth of 30% reaching the end of the study in 2018 with an import of about 16.000 kilograms. The initial investment is U.S. $ 11.300, the discount rate is 12% and a Net Present Value (NPV) of U.S. $ 103.820 and an Internal Rate of Return (IRR) of 139% and payback is the 1st year.
