Abstract
La pesca artesanal en Chile atraviesa por una difícil situación caracterizada por un desarrollo precario de la actividad. En este contexto, la Caleta de Pescadores Artesanales de Queule, IX región, busca superar esta realidad por medio de un proyecto de modernización y desarrollo de la actividad pesquera artesanal.Uno de los ejes de este proyecto tiene relación con garantizar una producción de calidad, inocua, legal y sustentable. Para dar cuenta de esto es necesario desarrollar un Sistema de Trazabilidad que permita acreditar el origen y el manejo adecuado del producto, garantizando información fidedigna para los consumidores y organismos que así lo requieran.El presente trabajo da cuenta de la implementación de dicho Sistema de Trazabilidad. En su capítulo primero se expresan los antecedentes en torno a la situación actual de la pesca artesanal, además de la importancia de la seguridad alimentaria en la producción de alimentos para el consumo humano. En el capítulo segundo se aborda el concepto de trazabilidad en la producción de alimentos, viendo definiciones, alcances y normativa al respecto. Por último, en el capítulo tercero, se aborda la implementación de un Sistema de Trazabilidad para la Planta de Congelados de Caleta Queule.
The artisanal fishery in Chile is going through a difficult situation characterized for a poor development in its activity. In this context, the Artisanal Fishery Cove of Queule, in the IX region of Chile, has looked for a way to get beyond this reality with a project of modernization and development of the artisanal fishery activity. One of the main ideas of this project is related with the importance of guarantee a quality innocuous, legal and sustainable production. To achieve these objectives, it has been necessary to develop a Traceability System that allows the accreditation of the origin and adequate management of the product, guarantying a reliable information for the consumers and the institutions involucrated. The present work shows the implementation of that Traceability System. In its first chapter, the work expresses the background of artisanal fisheries’ actual situation, as well as the importance of the food security in the production of food in the human consumption. The second chapter addresses the concept of traceability in the food production, its definition, significance and legal framework. At last, the third chapter deals with the implementation of a Traceability System for the Freezing Plant of the Queule’s cove.
