Abstract
El Trabajo de Titulo corresponde al desarrollo y posterior evaluacion de un Modelo de Negocio para una Cafeteria especialmente dedicada a las personas con Alergias Alimentarias.
Las Alergias Alimentarias son una patologia que afecta a alrededor de un 4% de la poblacion mundial; pero se presenta especialmente en bebes y ninos menores de 5 anos. Para el caso de los bebes en etapa de lactancia, los agentes alergenos son transmitidos por la madre mediante la leche materna; por esta razon, en la mayoría de los casos, la madre es quien debe realizar una dieta estricta para evitar la transmision de estos agentes a su hijo.
Debido a que hasta hace no muchos anos, las alergias alimentarias no eran muy estudiadas y muchas aflicciones de los bebes se normalizaban y no se les daba el diagnostico adecuado; se consideran una patologia que aun se encuentra en pleno desarrollo de estudios dedicados a estas.
Al igual que en el caso anterior, los productos especialmente elaborados para estas personas son escasos, de alto costo y de baja disponibilidad. Es bajo esta condicion, que creemos que tenemos la oportunidad de explotar un nicho que presenta una demanda insatisfecha.
Nuestra propuesta es ofrecer productos de pasteleria especialmente elaborados con ingredientes que no contengan los alergenos conocidos; que sean de muy buena calidad y saludables.
Para llegar a determinar cuales podrian ser los productos mas valorados por nuestro publico potencial, se realizo una encuesta y se compararon los resultados con otros estudios del area; llegando a resultados y descubrimientos muy similares.
El proyecto se diseno para ser realizado en tres etapas de caracter complementario y que iran requiriendo de distintos periodos de inversion para el inicio de su funcionamiento, de esta forma, permite no incurrir en grandes gastos desde el principio e ir escalando dependiendo de los resultados obtenidos en la etapa anterior.
Para el exito del proyecto juegan un papel muy importante el uso de Redes Sociales como Instagram y una pagina web que permitan dar a conocer nuestra propuesta y a la vez nos permita efectuar las ventas de productos.
Bajo todos estas consideraciones y supuestos se realizo un estudio de las condiciones de la Industria, del entorno Macroeconomico, analisis FODA y Estudio de Mercado; para posteriormente realizar una Evaluacion Financiera que dejo como resultado de que el proyecto es viable, rentable y economicamente conveniente para los emprendedores.
This Degree Work corresponds to the development and subsequent evaluation of a Business Model for a Coffee Shop specially dedicated to people with Food Allergies. Food Allergies are a pathology that affects around 4% of the world population; but it occurs especially in babies and children under 5 years of age. In the case of lactating babies, allergens are transmitted by the mother through breast milk; For this reason, in most cases, the mother is the one who must follow a strict diet to avoid the transmission of these agents to her child. Because until not many years ago, food allergies were not well studied, and many afflictions of babies were normalized, and they were not given the proper diagnosis; they are considered a pathology that is still in full development of studies dedicated to them. As in the previous case, the products specially made for these people are scarce, high cost and low availability. It is under this condition that we believe we have the business opportunity to satisfy that demand. Our proposal is to offer pastry products specially made with ingredients that do not contain known allergens; that are of very good quality and healthy. To determine which could be the most valued products by our potential public, a survey was carried out and the results were compared with other studies in the area, reaching very similar results and discoveries. The project was designed to be carried out in three stages of a complementary nature and that will require different investment periods for the start of its operation, in this way, it allows not to incur large expenses from the beginning and to scale up depending on the results obtained in the previous stage. For the success of the project, the use of Social Networks such as Instagram and a website that allow us to publicize our proposal and at the same time allow us to make product sales play a very important role. Under all these considerations and assumptions, a study of the conditions of the Industry, the Macroeconomic environment, FODA analysis and Market Study was carried out; to later carry out a Financial Evaluation that left as a result that the Project is viable, profitable, and economically convenient for entrepreneurs.
