Abstract
En esta tesis se realizó un estudio de prefactibilidad del proyecto de desarrollo e implementación a nivel industrial de un proceso de extracción de proteína de alfalfa para ser usada en la alimentación de salmónidos. El proyecto busca aprovechar el hecho de que en alimentación de salmónidos (truchas y salmones), la harina de pescado, recurso proteico fundamental, ha aumentado su precio de US$ 600/Ton, a US$1200/Ton en los últimos 2 años, valor que es difícil que baje y que se piensa seguirá en aumento, además la fuente proteica alternativa mas usada, la soya, también a presentado aumento de precio y disminución de disponibilidad. Considerando el escenario anteriormente expuesto, es que resulta atractivo buscar sustitutos proteicos de menor precio, y de suministro mas confiable que los actualmente usados por la industria salmonera nacional. El proyecto propuesto consiste en desarrollar e implementar a nivel industrial un proceso que permita extraer de la alfalfa (Medicago sativa) la proteína cloro y citoplasmática, llamadas también concertado proteico de hoja (CPH), para ser usada en la alimentación de salmones, a través del reemplazo parcial de las fuentes proteicas utilizadas actualmente (harina de pescado y soya principalmente). En términos generales la implementación de este proyecto requiere ejecutar las siguientes etapas: •Investigación y desarrollo, que permitirá definir a nivel de laboratorio proceso de extracción de proteína de alfalfa más eficiente. •Diseño, construcción y funcionamiento de planta piloto a partir de los datos obtenidos en la etapa de I+D. •Diseño, construcción y marcha blanca de planta industrial.
•Comercialización de la proteína obtenida (CPH). Para la evaluación del proyecto a nivel de prefactibilidad se realizó un estudio de mercado, un estudio técnico y finalmente un estudio económico. El estudio de mercado permitió comprender el macro y micro entorno, evidenciando las oportunidades del escenario actual, además de recopilar la información necesaria para establecer un modelo de negocio o estrategia de comercialización para proyectar la demanda de CPH en la etapa productiva y comercial del proyecto.
In this thesis was carried out of pre feasibility of the project of development and industrial implementation of an alfalfa protein extraction process for to be used in the diet of salmónidos. The project search to take advantage of the fact that in the diet of salmónidos (trout and salmon), the fishmeal, fundamental protean resource, has enlarged its price of US$600/Ton, to U$1200/Ton in the last 2 year, value that is difficult that descend and that thinks will continue in increase, besides the source protean alternative now used, the soy, also to presented increase of price and decrease of availability. Considering de situation previously exposed, is that attraction results to seek protean replacements of smaller price, and of supply but dependable that the at present used by the Chilean salmon industry. The project proposed consists of developing and to implement to industrial process that permit to extract of the alfalfa (Medicago Sativa), the protein, callas also concentrate protein of leaf (CPH in Spanish), for to be used in the diet of salmon, trough the partial replacement of the protean source utilized at present (fishmeal and soy chiefly). In general terms the implementations of this project requires to execute the following phases: • Research and development, that will permit to define to more efficient alfalfa protein extraction process (laboratory level). • Design, construction and operation of pilot plant from the data obtained in the phase of R+D. • Design, construction and start up of industrial plant • Commercialization of the protein obtained (CPH) For the evaluation of the pre feasibility of the project was carried out the following studies: market research, technical study and finally an economic study. The market research permitted to understand the macro and micro environment showing the opportunities of the current setting, besides compiling the necessary information to establish a model of business or strategy of commercialization for project the demand of CPH in the commercial and productive phases.
