Abstract
El presente trabajo de título consiste en una propuesta metodológica para alcanzar el control estadístico de calidad en el proceso de elaboración de arroz blanco de la empresa Tucapel en las líneas productivas de la Planta Tucapel Santiago, cuyo objetivo principal es dar mejoras al cumplimiento de las exigencias de calidad y al desempeño global del proceso a través del análisis del funcionamiento de cada parte involucrada en la elaboración de arroz. El trabajo inicia con la recopilación de información y evaluación del proceso en la Planta Tucapel Santiago con el fin de establecer un diagnóstico del desempeño del proceso que permita definir las variables con mayores problemas para cumplir con las exigencias de calidad según los requerimientos de la Norma chilena 1359. Of 2003. El levantamiento de información es apoyado por el personal del equipo de calidad de la Planta Santiago, quienes señalan que los inconvenientes del proceso se centran en la etapa de mezcla de granos y el sistema de medición. Los estudios de capacidad y estabilidad realizados a las variables del proceso confirman los inconvenientes mencionados, y en base a estos se comienza con la construcción de la propuesta tomando una perspectiva estratégica, de tal modo que las oportunidades de mejora puedan alinearse y lograr mayor impacto para resolver los problemas, teniendo siempre en cuenta las características de la materia prima y sus condiciones de elaboración. Para abordar el problema de la variabilidad e inconformidad de la variable granos partidos respecto al requerimiento normativo, se crea y ejecuta un estudio R&R el cual revela las debilidades del sistema de medición, cuyos resultados influyen de manera directa en el proceso de mezcla de granos. Luego, se dan propuestas de mejora para el proceso, aplicando como herramienta principal de detección de problemas el diseño factorial, y en lo que respecta al sistema de medición, el análisis variográfico. Finalmente, se formula un plan sistemático de mejora tomando estas propuestas y se añaden aspectos de mejora detectados durante el desarrollo del trabajo.
This thesis Project consists of a methodological proposal in order to achieve statistical quality control in the production process of white rice by Tucapel Company on the production lines of the Tucapel Santiago Plant whose main objective is to improve compliance with quality requirements and the overall performance process through the analysis of the functioning of each part involved in the production of rice. The project begins with compilation of information and evaluation process at the Tucapel Santiago Plant in order to establish a process performance diagnosis that allows to define the variables of the major problems so that meet the quality requirements according to the Chilean Standard 1359. Of 2003. The information survey is supported by the staff of quality team at Santiago Plant, who point out the inconveniences of the process focus on the grain mixing stage and the measuring system. Capacity and stability studies performed on process variables of the process confirm the above mentioned drawbacks, and based on these we begin with the construction of the proposal taking an strategic perspective so that opportunities for improvement can be aligned and achieve greater impact in solving problems always taking into account the characteristics of the raw material and its conditions of production. On the other hand, the problem of variability and nonconformity of the split grain variable regarding to the regulatory requirement an R&R study is created and executed, which reveals the weaknesses of the measurement system whose results directly influence the grain mixing process. Then, proposals for improvement of the process are given by applying as a primary problem detection tool; the factorial design as regards the measurement system, variographic analysis is used. Therefore, a systematic improvement plan is formulated taking into account these proposals adding aspects of improvement identified during the course of the work.
