Abstract
El presente trabajo tiene como objetivo proponer un modelo de negocios para la creaciónde una empresa, a saber, un restaurante de comida exclusivamente vegetariana, conopciones veganas y saludables. Todo esto, enmarcado en el análisis de un relativamentenuevo segmento de consumidores en auge. Estos entregan especial valoración a la responsabilidadque asumen las empresas en términos sociales y ambientales, están muyinformados y conectados, y juegan un papel activo en su alimentación y bienestar físico. Elproyecto centra sus esfuerzos en aquellos con las siguientes características demográficas:habitantes de Santiago, de las comunas de Lo Barnechea, Vitacura, Las Condes, La Reina yProvidencia, de los Grupos Socioeconómicos ABC1a.A pesar de ser una industria rentable, se observa que uno de los más grandes impedimentostienen relación con las grandes inversiones, las dificultades para adquisición decréditos y el marco legal tras la institución de la empresa. Por otro lado, el ticket medio deconsumo es una variable crítica, por lo que cualquier cambio en los precios podría tenerimportantes consecuencias en las ganancias esperadas.La propuesta se sustenta en la metodología CANVAS, bajo un modelo de diferenciación,que senta las bases estratégicas para la operación del negocio. Finalmente se realiza unestudio técnico y financiero, donde se observa en términos generales, la real posibilidad deestablecer el proyecto, junto con una rentabilidad estimada positiva.El explosivo aumento de estos consumidores, tanto a nivel mundial, como nacional,genera una oportunidad de negocio que, de ser llevada a cabo con éxito, puede capturar unaalta cuota de mercado, y con esto importantes ganancias.
The present paper aims to propose a business model for a exclusively vegetarianrestaurant, that caters vegan and healthy food options. The framework for this analysis isthis booming new segment, integrated by consumers who give significant value to the waybusiness handle social and environmental responsibility, are very informed and connected,and have an active role in their feeding and physical well-being.This project focuses onthose who have the next demographics: residents of the Greater-Santiago area, specially inthe communes of Lo Barnechea, Las Condes, Vitacura, La Reina y Providencia, and belongto the ABC1a socioeconomic group. Although a profitable industry, it was determined thatthe major hindrances were the big quantities of required investments, the diculties toobtain credits and the legal framework that is needed to comply with all the regulations.Additionally, it was found that the demand is a critical variable, and with the ubiquitousexistence of social media in today’s world, the success of an enterprise can be greatlyimpulsed or undermined. The proposal is based on the CANVAS methodology, with a focuson a dierentiation model which give the strategic pillars for a correct business operation.In the final stage, a technical and financial study was constructed, where it was concludedthat there is a real possibility of establishing this project successfully, with a estimatedpositive financial return. The explosive growth of this consumer segment in national andworldwide sense create a business opportunity that, if carried successfully, can capture animportant market quota and give big returns to its investors.
