OLIVOS CENTENARIOS. CENTRO DE INTERPRETACIÓN GASTRONÓMICO [RE-SIGNIFICACIÓN DE LA IDENTIDAD OLIVARERA DEL VALLE DEL HUASCO] PUESTA EN VALOR DE LA “RUTA DE LOS OLIVOS CENTENARIOS”

Abstract

El Valle del Huasco, ubicado en la tercera Región de Atacama se destaca por sus grandes plantaciones de olivos que marcan una identidad enel paisaje local. Esto junto a los apetecidos productosolivareros producidos, brindan al valle unimportante potencial gastronómico poco explorado.A pesar de este potencial, el Valle del Huasco seha visto afectado por la contaminación productode años de procesos industriales y mineros enla zona. Es a partir de esto que se ha creadouna imagen de la zona como un sector erosionadopor la industria, opacando el potencial comodestino para el turismo rural y gastronómico.Es aquí donde se ve una oportunidad y nacela idea de insertar en el Valle del Huasco unproyecto que marque un punto de inflexión que,rescate la identidad del patrimonio olivarero delvalle y que redefina la imagen de la región.De todos los productos olivareros producidos enla región el mas destacado y rentable económicamentehablando es el aceite de oliva debidoa sus grandes cualidades gastronómicas y desalud lo han llevado a ser el aceite mas saludablepara el consumo. Su uso ha ido en aumentoen el mercado nacional e internacional y el consumose ha expandido hasta llegar a abarcar elinterés de mas de 50% de la población chilena.

Huasco Valley, located in the third region of Atacama is known for its large olive groves that make an identity in the local landscape. This, together with the desired products produced olive growers, give the valley an important gastronomic potential unexplored.Despite this potential, the Huasco Valley has been affected by pollution from years of industrial and mining processes in the area. It is from this that has created an image of the area as an eroded by industry, overshadowing the potential as a destination for rural tourism and gastronomy sector.It is here where you see an opportunity and the idea to insert in the Huasco Valley a project that marks a turning point that rescue the identity of the olive heritage of the valley and to redefine the image of the region.Olivareros all products produced in the region and the most prominent is economically profitable olive oil because of its great gastronomic and health qualities have led him to be the healthiest oil for consumption. Its use has been increasing in the domestic and international market and consumption has expanded to encompass the interest of more than 50% of the Chilean population.
